Pour-over coffee: The complete guide to a perfect brew

Water slowly passing through a layer of ground coffee. Nothing more. Pour-over is the most stripped-down extraction method there is—and probably the most demanding. No machine compensates for your mistakes, no pressure masks approximate grinding. There's only you, the water, and the bean.

This is precisely what makes it the preferred method for specialty coffee lovers. When executed well, it reveals aromas that no espresso can bring out: floral notes, fruity acidity, and a sweet finish.

This guide covers everything: the equipment, the five variables that determine the result, the step-by-step recipe, and the mistakes that spoil a cup.

1. What is pour-over?

Pour-over (or "gentle method" in French) refers to any extraction where hot water is manually poured over ground coffee placed in a filter, with gravity doing the rest.

Unlike espresso, which uses 9 bars of pressure and 25 seconds, pour-over works at atmospheric pressure for 2 to 4 minutes. The result: a clearer, lighter cup, where volatile aromas survive instead of being crushed.

The method comes from Germany—Melitta Bentz patented the paper filter in 1908—but it was in Japan that it was elevated to the status of a ritual. Kissaten, traditional Japanese coffee shops, turned slow pouring into a discipline in its own right, where the gesture matters as much as the result.

2. Essential equipment

Four items are enough. Each has a direct influence on the cup.

The dripper (or filter holder)

It determines the flow rate and thus the water/coffee contact time. Conical models with a large opening offer more control but require more precision.

The gooseneck kettle

A classic kettle pours too fast and too wide. The tapered "gooseneck" spout allows for a fine, regular, and precise stream of water—essential for evenly wetting the coffee bed.

The grinder

The most important point on this entire list. Pre-ground coffee loses 60 to 70% of its aromatic compounds within 15 minutes of grinding.

Opt for a burr grinder rather than a blade grinder: burrs produce a regular particle size, while blades chop randomly and create a mix of dust and large pieces that extract at different speeds. Our manual grinder with ceramic burrs does not heat the beans, unlike entry-level electric grinders.

The carafe (or server)

It receives the extracted coffee. Borosilicate glass is ideal: neutral in taste, resistant to thermal shock, and transparent—you follow the color of the extraction in real time.

3. The five variables that change everything

Once equipped, the quality of your cup depends on five settings. Modify only one at a time to understand its effect.

The grind

For pour-over, aim for a texture similar to caster sugar—neither powder nor coarse salt.

  • Too fine: water stagnates, extraction takes too long, the cup becomes bitter and astringent.
  • Too coarse: water passes through too quickly, the coffee is acidic, watery, without body.

The coffee/water ratio

The reference is 60 g of coffee per liter of water, which is a ratio of 1:16.7. In practice, for one cup:

  • 15 g of coffee for 250 ml of water—a generous cup
  • 20 g for 330 ml—two small cups

Always weigh. A teaspoon varies from 4 to 8 g depending on the density of the bean—this is a major source of error.

The temperature

92 to 96 °C for most coffees. Lower for dark roasts (88-92 °C), higher for light roasts (94-96 °C).

Without a thermometer: bring to a boil, then wait 30 to 45 seconds. Boiling water burns the coffee and extracts bitter compounds.

The extraction time

Allow 2 min 30 to 3 min 30 from the first pour to the last drop, for a single cup.

If your extraction is too fast, refine the grind. Too slow, coarsen it. This is the only setting to modify—keep the ratio and temperature constant during your trials.

The pouring technique

Pour in slow spirals from the center outwards, without ever touching the filter walls. Water that runs along the paper bypasses the coffee and dilutes your cup without extracting anything.

4. The step-by-step recipe

For a 250 ml cup—15 g of coffee, 250 ml of water at 93 °C.

  1. Heat the water to 93 °C and weigh 15 g of beans.
  2. Rinse the filter with hot water, dripper placed on the carafe. This eliminates the paper taste and preheats the whole assembly. Discard this water.
  3. Grind just before extraction, caster sugar texture.
  4. Pour the grounds into the filter and level the surface with a small tap.
  5. Bloom: pour 30 to 45 ml of water (2 to 3 times the weight of the coffee) wetting the entire surface. Wait 30 to 45 seconds. The coffee swells and releases its CO₂—this step is essential, it conditions the entire extraction.
  6. First pour: go up to 150 ml in slow spirals.
  7. Second pour: when the level drops to halfway, complete up to 250 ml.
  8. Let it drip until the last drop. The coffee bed should be flat and uniform—if it has craters or dry spots, your pour was irregular.
  9. Serve immediately. Filter coffee loses its aromas within 10 minutes.

5. The five most common mistakes

  • Using pre-ground coffee. This is by far the most costly mistake in terms of taste. Grinding on demand changes everything, even more than the equipment.
  • Skipping the bloom. Without this degassing phase, trapped CO₂ repels water and creates uneven extraction.
  • Pouring boiling water. 100 °C burns aromatic compounds and extracts bitterness.
  • Pouring too fast. A brutal pour digs into the coffee bed and creates preferential channels: water passes through the dug-out areas and ignores the rest.
  • Not weighing. Without a scale, you cannot reproduce a good cup or correct a bad one.

6. Adapt according to your coffee

Each origin requires a slightly different setting:

  • East Africa (Ethiopia, Kenya) — floral and acidic profiles. Hotter water (94-96 °C), slightly finer grind to develop sweetness.
  • Central and South America (Colombia, Guatemala, Brazil) — chocolatey and balanced profiles. Standard settings (92-94 °C).
  • Asia and Indonesia (Sumatra, Java) — earthy and full-bodied profiles. More temperate water (90-92 °C), coarser grind.

Frequently Asked Questions

Paper filter or stainless steel filter: which to choose?

Paper retains oils and produces a very clean, crisp cup, where acidic notes stand out. Stainless steel lets them through: the body is rounder, the texture denser, but the cup may appear cloudier. A matter of taste—and stainless steel has the advantage of being indefinitely reusable.

Can you do pour-over without a scale?

Yes, but you won't be able to reproduce your successes. A kitchen scale accurate to 0.1 g is the best €20 investment you can make for your coffee.

My coffee is bitter, what should I do?

Bitterness indicates over-extraction. In order: coarsen the grind, lower the temperature by 2 °C, reduce the total time. Modify only one parameter at a time.

My coffee is acidic and watery, what should I do?

This is under-extraction. Refine the grind, increase the temperature, lengthen the contact time.

How long do whole coffee beans last?

Ideally consumed within 3 to 4 weeks after roasting. Store in an airtight container, away from light and humidity—never in the refrigerator, as condensation degrades aromas.

Should I rinse the paper filter?

Yes. Rinsing eliminates the cellulose taste and preheats the dripper and carafe, preventing a temperature drop during the first pour.
